Iniziare preparando la base: mescolare in una ciotola 30g di farina di mandorle con 1 albume d'uovo fino ad ottenere un composto omogeneo. Versare in un piccolo anello di acetato (Ø 6cm) su carta forno e lasciare riposare per 15 minuti.

Montare 100g di yogurt greco 0% con una frusta manuale fino a renderlo cremoso e tenerlo da parte.

In un pentolino, cuocere 80g di more fresche con 1 cucchiaino di succo di limone e 5g di eritritolo per circa 5 minuti, fino a che le more non si ammorbidiscono.

Aggiungere 2g di gelatina in fogli previamente ammollata e mescolare bene fino a completo scioglimento. Lasciare intiepidire per 5 minuti.

Incorporare delicatamente la composta di more allo yogurt greco montato, mescolando con una spatola.

Versare il composto sulla base di mandorle, livellare e riporre in frigorifero per almeno 2 ore fino a completa gelificazione.
