Mescolare in una ciotola la farina di mandorle (25 g), lo psyllium husk (5 g), il sale e aggiungere 40 ml di acqua fredda; impastare con le mani fino a ottenere un panetto compatto. Avvolgere nella pellicola e riposare 15 minuti in frigorifero.

Nel frattempo tritare finemente il porro (120 g) e rosolare in padella con 3 ml di olio EVO, sale e pepe per 6 minuti a fuoco medio. Aggiungere 40 g di yogurt greco 0% e mescolare; trasferire in una ciotola.

Stendere l'impasto tra due fogli di carta forno fino a ottenere un rettangolo di 20x12 cm circa. Distribuire il ripieno al porro al centro, aggiungere 60 g di salmone affumicato a strisce e 30 g di yogurt greco.

Arrotolare l'impasto su se stesso sigillando i bordi con acqua, trasferire su placca con carta forno. Spennellare con un poco di latte e cospargere con 3 g di semi di papavero.

Cuocere a 180°C per 20 minuti fino a doratura. Estrarre e lasciare intiepidire 2 minuti prima di servire.
