Preriscalda il forno a 200°C.

Taglia il cavolfiore a cimette di circa 2 cm, condiscile con un cucchiaio di olio EVO e un pizzico di sale.

Cuoci il cavolfiore in forno per 15-20 minuti, finché non sarà dorato.

In un mortaio, schiaccia gli spicchi d'aglio con un pizzico di sale fino a ottenere una crema.

Trasferisci il cavolfiore cotto in una ciotola, aggiungi la crema d'aglio e le proteine in polvere. Mescola bene schiacciando il tutto con un cucchiaio fino a ottenere un composto omogeneo ma con qualche pezzetto.

Aggiungi la pancetta tritata e mescola nuovamente per amalgamare.
