In una ciotola grande, mescola l'acqua, l'olio di sesamo e l'amido di mais; aggiungi il pollo a cubetti e mescola bene per farlo marinare.

In un'altra ciotola, combina la salsa hoisin, la salsa di soia e l'aceto di riso; mescola e metti da parte.

Scalda una padella antiaderente a fuoco medio e cuoci le uova sbattute per 3-4 minuti, poi girale e cuoci fino a che non si rassodano; trasferisci su un tagliere e taglia a striscioline.

Aggiungi il pollo marinato nella padella e cuoci per circa 6-8 minuti, fino a doratura.

Rimuovi il pollo e mettilo da parte; nella stessa padella, aggiungi un cucchiaino di olio se necessario, poi il cavolo, i funghi e l'aglio, cuocendo finché il cavolo non si appassisce (circa 3 minuti).

Rimetti il pollo e le striscioline di uovo nella padella, aggiungi la salsa preparata e mescola bene; cuoci per altri 2-3 minuti fino a che la salsa non si addensa.

Infine, aggiungi i cipollotti e mescola un'ultima volta prima di servire.
