Preriscalda il forno a 200°C.

Taglia le zucchine a bastoncini di circa 5 mm di spessore, cercando di uniformarli.

Distribuisci i bastoncini di zucchina in una ciotola, versa 10 ml di olio extravergine, aggiungi sale, pepe e peperoncino se desideri. Mescola delicatamente.

Prendi dei coppapasta tondi (diametro 4-5 cm) e crea dei nidi intrecciando i bastoncini di zucchina dentro e attorno al coppapasta: posiziona il coppapasta su una teglia rivestita di carta forno, inserisci i bastoncini verticalmente e orizzontalmente in modo da formare una struttura reticolare.

Riempi il centro di ogni nido con strisce di speck piegate.

Cospargere ogni nido con parmigiano reggiano grattugiato e un leggero filo di olio rimanente (5 ml totali).

Inforna per 20-25 minuti fino a quando i bastoncini di zucchina iniziano a dorarsi ai bordi e lo speck diventa croccante.

Estrai dal forno e lascia raffreddare per 3-4 minuti prima di estrarre delicatamente i coppapasta.

Servire tiepidi o a temperatura ambiente.
