Preriscalda il forno a 90°C ventilato. Su un foglio di carta forno, disegna un cerchio di circa 8 cm di diametro come guida.

In una ciotola, monta l'albume a neve ferma con un pizzico di sale. Quando inizia a diventare spumoso, aggiungi lentamente l'eritritolo e continua a montare fino a ottenere picchi rigidi.
