In una ciotola, tagliare il petto di pollo a cubetti e condirlo con paprika, sale e pepe. Tenere da parte.

In una padella antiaderente, scaldare l'olio e aggiungere la cipolla tagliata a fette e i peperoni a cubetti. Cuocere per circa 5 minuti fino a quando le verdure sono tenere.

Aggiungere il pollo nella padella e cuocere per altri 8-10 minuti, mescolando di tanto in tanto, fino a quando il pollo è ben cotto.

In una ciotola, sbattere le uova con il latte, il sale, il pepe e l'erba cipollina.

Versare il composto di uova sopra il pollo e le verdure nella padella e cuocere a fuoco medio-basso fino a quando l'omelette inizia a rapprendersi, circa 5 minuti.
