Pulire i calamari e le seppie, tagliarli a strisce sottili; lasciare i gamberi interi.

In una pentola portare a ebollizione 700 ml di acqua con sale, scalogno tagliato finemente e il gambo di sedano spezzettato.

Aggiungere l'orzo integrale e cuocere a fuoco medio per 15 minuti finché non sarà al dente.

In un secondo recipiente con acqua salata bollente cuocere separatamente i calamari per 3-4 minuti, le seppie per 4-5 minuti e i gamberi per 2 minuti; scolarli e lasciarli raffreddare leggermente.
