In una ciotola, unisci farina di riso integrale, farina di grano saraceno, proteine in polvere, semi di lino macinati, fecola di patate e sale; mescola bene e metti da parte.

In una terrina grande, versa 450 ml di acqua tiepida e aggiungi il lievito di birra; mescola e lascia riposare 2 minuti affinché il lievito si attivi.

Incorpora lo psillio e il miele all'impasto, mescolando per 1 minuto fino a ottenere una consistenza omogenea.

Lascia riposare 3 minuti, poi aggiungi la miscela di farine e mescola energicamente per circa 5-6 minuti fino a formare un impasto liscio e elastico (leggermente appiccicaticcio è normale).

Oliando le mani, trasferisci l'impasto in una ciotola leggermente oleata; copri con un canovaccio umido.

Lascia lievitare a temperatura ambiente (circa 24-26°C) per 2 ore, fino a raddoppiare il volume.

Preriscalda il forno a 240°C e fodera una teglia con carta forno.

Trasferisci l'impasto sulla teglia, pratica alcuni tagli superficiali sulla superficie con un coltello umido e cuoci per 20-25 minuti fino a doratura.
