Method

Tritare finemente il rosmarino fresco e lasciarlo macerare in 5ml di olio extravergine di oliva per almeno 2 ore.

In una ciotola, sciogliere il lievito in acqua tiepida insieme al malto d'orzo, mescolando delicatamente.

Aggiungere le farine di forza e di ceci, il sale e i semi di girasole e lino: impastare per circa 8-10 minuti fino a ottenere un impasto elastico.

Incorporare l'olio aromatizzato al rosmarino e continuare a impastare per altri 3-4 minuti fino a completa amalgamazione.

Formare una palla di impasto, metterla in una ciotola coperta con pellicola e far lievitare per 50-60 minuti a temperatura ambiente fino al raddoppio del volume.

Trasferire l'impasto su un piano infarinato, degassarlo delicatamente e formare un filone tondo, arrotolando le estremità verso il centro.

Posizionare su una placca rivestita di carta forno, coprire e far lievitare ancora 35-40 minuti.

Preriscaldare il forno a 200°C. Prima di infornare, praticare un'incisione superficiale sulla superficie del pane con un coltello affilato.

Cuocere per 38-42 minuti fino a doratura uniforme e suono cavo quando picchiettato sul fondo.

Trasferire su una griglia e far raffreddare almeno 15 minuti prima di affettare e servire.
