Method

In una ciotola, sciogliere l'acqua tiepida con il lievito di birra e l'eritritolo, lasciando riposare per 10 minuti.

Unire il composto lievitato con la farina di mandorle, le proteine in polvere, il sale e l'acqua fredda; impastare energicamente per circa 5 minuti fino ad ottenere un impasto omogeneo.

Formare una palla e metterla in una ciotola leggermente unta d'olio, coprire con un canovaccio e far lievitare in un luogo caldo per 30 minuti.

Trasferire l'impasto su una teglia rivestita di carta forno, dare la forma allungata e far riposare per ulteriori 15 minuti.

Cuocere in forno statico a 200°C per circa 20 minuti, fino a doratura; lasciare raffreddare prima di servire.
