Versa l'acqua tiepida in una ciotola e aggiungi il lievito di birra secco, lasciando riposare 5 minuti fino a quando la miscela diventa cremosa.

In una seconda ciotola, mescola la farina di riso integrale, la farina di soia tostata, i fiocchi d'avena, lo psillio e il sale.

Versa il composto del lievito nella ciotola secca e mescola energicamente con una frusta per 2-3 minuti fino a ottenere un impasto omogeneo e denso.

Fodera uno stampo rettangolare di circa 20x15 cm con carta forno e trasferisci l'impasto al suo interno, livellando la superficie con un cucchiaio bagnato.

Cospargi i semi di sesamo sulla parte superiore e copri con un canovaccio umido.

Lascia lievitare a temperatura ambiente per circa 50-60 minuti, finché l'impasto non aumenta visibilmente di volume (non deve necessariamente raddoppiare).

Preriscalda il forno a 200°C.

Spruzza leggermente acqua sulla superficie del pane e inforna per 40-45 minuti fino a quando la crosta risulta dorata e il pane suona vuoto quando picchiettato.

Estrai lo stampo dal forno e lascia raffreddare completamente su una griglia prima di sformare e affettare.
