In una ciotola, mescolare l'acqua tiepida con il lievito di birra e l'olio, e lasciar riposare per 5 minuti.

In un'altra ciotola, unire la farina di segale, la farina di mandorle, le proteine in polvere, i semi di chia e il sale.

Versare il mix di acqua e lievito negli ingredienti secchi e mescolare fino a ottenere un composto omogeneo.

Formare una palla e coprire con un canovaccio, lasciando lievitare per 15 minuti a temperatura ambiente.

Preriscaldare il forno a 220°C e preparare una teglia con carta forno.

Trasferire l'impasto su un piano leggermente infarinato, appiattirlo delicatamente fino a formare un disco di circa 8 cm.

Posizionare il disco sulla teglia e cuocere in forno per 10-12 minuti, finché non è dorato e croccante.
