Triturare finemente le noci in un mixer fino a ottenere una consistenza granulosa, quindi trasferire in una ciotola.

In una tazza, sciogliere il lievito secco nell'acqua tiepida aggiungendo il miele e lasciare riposare per 5 minuti fino a formare una schiuma leggera.

In una ciotola grande, combinare la farina integrale di farro, la protein powder, il sale e la curcuma.

Versare il liquido lievitato nella miscela secca insieme all'olio extravergine e le noci tritate; impastare energicamente per 8-10 minuti fino a ottenere un impasto elastico, liscio e omogeneo.

Trasferire l'impasto in una ciotola leggermente unta, coprire con un panno umido e lasciar lievitare in luogo tiepido per 90 minuti fino al raddoppio del volume.

Dividere l'impasto in 12 porzioni uguali di circa 55 g ciascuna e formare palline uniformi; disposte su una placca rivestita di carta forno, distanziate di 3-4 cm.

Spennellare delicatamente la superficie di ogni panino con un filo d'olio, poi cospargere uniformemente con i semi di sesamo e girasole.

Coprire nuovamente con il panno umido e lasciar lievitare per 60 minuti fino a visibile aumento di volume.

Preriscaldare il forno a 190°C per 15 minuti.

Cuocere i panini in forno caldo per 18-20 minuti fino a doratura uniforme e suono cavo al tocco.
