Tagliate la pancetta a cubetti regolari e fatela rosolare in una pentola grande a fuoco medio per 3-4 minuti fino a renderla croccante; trasferitela su un piatto con carta assorbente.

Nello stesso grasso di cottura della pancetta, aggiungete il sedano, la carota e la cipolla finemente tritati insieme ai rametti di rosmarino; fateli soffrire per 5 minuti a fuoco medio.

Versate 800 ml di acqua, il dado vegetale e portate a ebollizione; aggiungete 200 g di ceci interi e lasciate cuocere per 12 minuti.

Nel frattempo, frullate gli altri 120 g di ceci con 200 ml di acqua fino a ottenere una crema liscia e omogenea.

Aggiungete la pasta integrale al brodo bollente e cuocete seguendo il tempo indicato sulla confezione (in genere 10-12 minuti), mescolando di tanto in tanto.

A cottura quasi completata, versate la crema di ceci nel minestrone, mescolate bene e lasciate cuocere per altri 2-3 minuti per amalgamare il tutto.

Regolate di sale e pepe, quindi servite in ciotole, completando con la pancetta croccante e un filo di olio extravergine di oliva.
