Method

Tostate le mandorle intere in padella antiaderente a fuoco medio per 3-4 minuti, girandole spesso finché non dorano leggermente. Fatele raffreddare e tritatele grossolanamente, mescolando con 10g di zucchero di canna e la cannella.

Preriscaldate il forno a 180°C. Prendete 1 foglio di pasta fillo, spruzzate leggermente con spray di olio (o pennellate con 1/2 cucchiaino di olio EVO), adagiatelo su carta forno.

Ripetete l'operazione con 2-3 fogli di pasta fillo, alternando strati di composto di mandorle. Chiudete a busta il bordo della fillo e infornate per 10-12 minuti finché non è dorata.

Nel frattempo, scaldate il latte (200ml) a fuoco lento, aggiungete il restante zucchero di canna (5g) e l'acqua di fiori d'arancio.

Estraete la pastilla dal forno, adagiatela nel piatto e versate delicatamente il latte caldo versato poco a poco, proprio al momento di servire.
