Inizia il ripieno: in una padella antiaderente, scalda l'olio EVO e aggiungi la cipolla tritata. Rosola per 5 minuti.

Unisci gli spinaci freschi e cuoci finché non appassiscono. Regola di sale e pepe.

In una ciotola, mescola la ricotta magra con l'albume d'uovo e il composto di spinaci e cipolla fino ad ottenere un ripieno omogeneo.

Per l'impasto, versa la farina integrale in una ciotola, aggiungi acqua tiepida e un pizzico di sale. Impasta fino ad ottenere un composto liscio.

Stendi l'impasto su un piano infarinato fino a uno spessore di circa 3mm e ritaglia dei dischi di 8cm di diametro.

Metti un cucchiaio di ripieno al centro di ogni disco, ripiega a metà e sigilla i bordi con le dita.

Cuoci i pierogi in acqua salata bollente per 5-7 minuti, finché non vengono a galla. Scolali e servili caldi.
