Scaldare l'acqua a 37°C e sciogliervi il lievito di birra; lasciare riposare 5 minuti finché non forma schiuma.

In una ciotola mescolare la farina integrale con la farina di ceci, aggiungere il sale.

Versare il lievito sciolto sulla miscela di farine, aggiungere l'olio; impastare con le mani per 8-10 minuti fino a ottenere un impasto liscio ed elastico.

Coprire con un canovaccio umido e lasciare lievitare 90 minuti in luogo tiepido (volume raddoppiato).

Preparare il condimento: triturare finemente l'aglio, versare la polpa di pomodoro in una ciotola, aggiungere aglio, olio, miele, pepe; mescolare bene.

Stendere carta da forno su due placche. Dividere l'impasto in 12 pezzi, formare palline compatte.

Appiattire ogni pallina con le mani a disco di circa 7 cm di diametro; disporre sulla carta.

Coprire con pellicola trasparente e lasciare riposare 60 minuti.

Preriscaldare il forno a 210°C statico.

Togliere la pellicola, distribuire il sugo di pomodoro sui dischi in modo uniforme.

Cuocere per 14-16 minuti fino a doratura leggera.
