Method

Preriscaldare il forno a 180°C. Rivestire uno stampo per plumcake con carta da forno o ungere leggermente con olio di cocco.

In una ciotola capiente, setacciare la farina integrale, le proteine in polvere, il lievito e il sale.

In un'altra ciotola, montare leggermente le uova intere con lo zucchero integrale fino a ottenere un composto chiaro e spumoso (circa 2-3 minuti a mano con frusta, o 1 minuto con frullatore a immersione).

Aggiungere il latte scremato e l'olio di cocco al composto di uova e zucchero, mescolare bene.

Versare il liquido sui secchi e amalgamare delicatamente con una spatola fino a ottenere un impasto omogeneo (non sovramischiare).

Tritare grossolanamente 40g di noci e incorporarle nell'impasto; distribuire i restanti 20g di noci intere sul fondo dello stampo.

Trasferire l'impasto nello stampo preparato, livellando la superficie.

Infornare a 180°C per 33-37 minuti: il plumcake è pronto quando uno stecchino infilzato al centro emerge quasi asciutto.

Sfornare, spolverizzare immediatamente la superficie con il cocco disidratato grattugiato mentre il dolce è ancora caldo (il calore ne esalta l'aroma).

Lasciar raffreddare completamente sulla griglia prima di affettare: questo garantisce una migliore compattezza della mollica.
