Lava i broccoli e dividi in cimette medie; porta a ebollizione acqua salata in una pentola e cuoci i broccoli per 6-7 minuti fino a cottura al dente, quindi scolali e asciugali bene.

Taglia il prosciutto cotto in piccole strisce irregolari.

In una ciotola, sbatti le uova con il latte scremato, aggiungi la ricotta precedentemente passata al setaccio, il Parmigiano reggiano, la salsa di soia, un pizzico di sale, pepe e noce moscata; mescola fino a ottenere un composto omogeneo e cremoso.

Preriscalda il forno a 180°C.

Stendi la pasta sfoglia integrale su un foglio di carta forno formando un disco di circa 26 cm di diametro.

Trasferisci la pasta (con la carta) su uno stampo apribile rotondo di 24 cm di diametro, facendola aderire ai bordi; ripiega i bordi sporgenti verso l'interno creando un bordo rialzato.

Distribuisci i broccoli e il prosciutto cotto in modo uniforme sulla pasta; versa il composto cremoso sopra gli ingredienti.

Inforna per 38-40 minuti fino a che il ripieno risulta ben sodo e la pasta leggermente dorata.

Estrai dal forno con cautela, lascia intiepidire per 5 minuti, quindi affetta con un coltello caldo e umido.
