Pelate lo zenzero fresco (2 cm) e tagliatelo a sottili julienne. Tagliate il pimento rosso a fettine sottili, eliminate i semi.

Portate a ebollizione 250 ml di brodo vegetale con la salsa di soia (1 cucchiaio) e lo zenzero; fate sobbollire 3 minuti per infondere gli aromi.

Aggiungete al brodo le carote tagliate a rondelle (80 g), i funghi champignon dimezzati (60 g) e i broccoli (60 g); cuocete 5 minuti a fuoco medio.

Nel frattempo, cuocete il filetto di merluzzo (140 g) a vapore per 10 minuti fino a cottura completa.

Cuocete gli spaghetti integrali (70 g) in acqua salata per 8-9 minuti, scolateli al dente.

Versate il brodo caldo con le verdure in una ciotola fonda, adagiate gli spaghetti e il merluzzo in superficie; condite con 1 cucchiaino di olio di sesamo, decorate con pimentone e semi di sesamo (0,5 g).
