Preriscalda il forno a 200°C. Taglia zucchine, melanzane e pomodori a fette di circa 3 mm di spessore.

Disponi le verdure su una teglia foderata di carta forno, condisci con mezzo cucchiaio d'olio, sale, pepe e timo. Griggia in forno per 15-18 minuti fino a doratura leggera.

Mentre cuociono le verdure, amalgama in una ciotola la ricotta magra con 1 spicchio d'aglio tritato, sale e pepe.

Stendi la pasta integrale con un mattarello tra due fogli di carta forno fino a ottenere un disco di circa 30 cm di diametro e 4 mm di spessore.

Trasferisci il disco di pasta su una teglia con carta forno. Distribuisci la crema di ricotta al centro, lasciando 4 cm di bordo libero.

Disponi le verdure grigliate sopra in modo ordinato, alternando i colori. Condisci con sale e pepe.

Ripiega i bordi della pasta verso il centro, creando una piega naturale attorno alle verdure. Spennella il bordo con il rimanente olio.

Cospargere con il Parmigiano grattugiato. Cuoci in forno a 200°C per 30 minuti fino a quando la pasta non risulta dorata e croccante.

Estrai dal forno e lascia riposare 5 minuti prima di servire.
