Lavare la coriandre fresca, asciugarla e tritarla finemente insieme all'aglio e cipolla sbucciati. Aggiungere il ras el hanout, il parmigiano grattugiato e 1 cucchiaino di olio EVO, mescolare fino a ottenere una pasta compatta e profumata.

Disporre il foglio di pasta fillo su un piano di lavoro, distribuire uniformemente la crema di coriandre su metà superficie. Arrotolare a cilindro partendo dal lato ripieno, sigillare gli angoli con 1 cucchiaino di olio EVO diluito in acqua.

Su un secondo foglio di pasta fillo, stendere il coulis di pomodoro mischiato con 1 cucchiaino di harissa diluita. Cospargere con i semi di sesamo e arrotolare come il primo. Riposare in freezer per 10 minuti.

Preriscaldare il forno a 180 °C. Tagliare i rotoli in fette di 1 cm di spessore, disporle su una teglia con carta forno, spruzzare leggermente con spray di olio.

Cuocere in forno per 12-15 minuti fino a doratura leggera. Servire caldo o tiepido.
