In una ciotola, riscalda il latte scremato e sciogli il lievito. Aggiungi l'uovo e l'olio, mescolando bene.

In un'altra ciotola, unisci la farina d'avena, le proteine in polvere e un pizzico di sale. Versare il mix liquido e amalgama fino a ottenere un impasto omogeneo.

In una padella antiaderente, cuoci le mele a cubetti con l'eritritolo e la cannella per circa 3-4 minuti, finché non si ammorbidiscono. Aggiungi le noci tritate e mescola.

Stendi l'impasto su un foglio di carta forno, distribuisci il ripieno di mele e noci, arrotola e forma un rotolo.

Adagia il rotolo su una teglia rivestita di carta forno e cuoci in forno preriscaldato a 180°C per 15 minuti, finché non è dorato. Lascia raffreddare prima di servire.
