Method

In una padella grande, scalda l'olio a fuoco medio e aggiungi la cipolla tritata. Cuoci fino a renderla traslucida, circa 5 minuti.

Aggiungi i funghi affettati e l'aglio, continuando a cuocere fino a quando i funghi sono morbidi, circa 5 minuti. Condisci con sale e pepe e trasferisci il tutto in una ciotola.

Nella stessa padella, aggiungi gli spinaci e cuocili fino a farli appassire, circa 3-5 minuti. Condisci con sale e pepe, poi trasferisci in un'altra ciotola.

Preriscalda il forno a 180°C. Stendi la pasta sfoglia integrale su una superficie infarinata e distribuisci uniformemente il composto di cipolla e funghi, lasciando un bordo di 2 cm.

Posiziona i filetti di salmone al centro, spolvera con paprika e aggiungi gli spinaci sopra il salmone.

Copri con un altro strato di pasta sfoglia, sigilla bene i bordi e spennella la superficie con il tuorlo d'uovo.

Trasferisci il tutto su una teglia rivestita di carta da forno e cuoci in forno per 25 minuti, o fino a quando la pasta è dorata.

Lascia raffreddare per qualche minuto prima di tagliare in porzioni e servire.
