Preriscaldare il forno a 200°C. Foderare una placca con carta forno.

Lavare i filetti di salmone, asciugarli con carta assorbente e sistemarli sulla placca, pelle verso il basso.

In una ciotola, mescolare l'olio extravergine, lo zenzero grattugiato, la menta tritata, l'aglio e il succo di mezzo limone fino a ottenere un composto omogeneo.

Distribuire equamente il composto sulla superficie di ogni filetto, pressando leggermente. Spolverare con pepe rosa in grani frantumati e sale marino.

Infornare per 16-18 minuti, finché il salmone è opaco all'interno e si sfoglia facilmente con una forchetta.
