Preriscalda il forno a 200°C e prepara un foglio di carta da forno, piegandolo a metà e ritagliando una forma a cuore. Ungi leggermente con olio EVO entrambi i lati.

Cuoci il cavolfiore in acqua salata per 5-6 minuti fino a renderlo tenero, quindi scola bene.

Scottare gli asparagi in acqua bollente per 3 minuti, poi trasferiscili immediatamente in acqua ghiacciata per mantenere il colore e la croccantezza. Scola e asciuga.

Posiziona il filetto di salmone al centro di un lato del cuore di carta da forno, aggiungi il cavolfiore e gli asparagi. Condisci con sale, pepe, un filo di olio EVO e qualche goccia di succo di limone. Aggiungi il rametto di rosmarino per un aroma in più.

Chiudi il cartoccio sigillando bene i bordi con pieghe sovrapposte.

Cuoci in forno per circa 15 minuti. Lascia riposare per 2 minuti prima di aprire il cartoccio con attenzione.
