Riempire una pentola con acqua per il bagnomaria e portarla a temperature moderate (non bollente).

In una ciotola resistente al calore, versare i tuorli d'uovo e aggiungere il succo di limone fresco e l'acqua filtrata.

Posizionare la ciotola a bagnomaria, mantenendo il fuoco basso, e iniziare a montare energicamente con una frusta per 3-4 minuti fino a ottenere una emulsione pallida e gonfia.
