Cuocere la quinoa: sciacquare la quinoa sotto acqua corrente, poi cuocerla in 200 ml di acqua salata per circa 12-15 minuti, finché è tenera. Scolare e mettere da parte.

Preparare il ripieno: in una padella, scaldare l'olio d'oliva e aggiungere l'aglio tritato. Rosolare leggermente e poi aggiungere gli spinaci, cuocendo fino a quando non si appassiscono (circa 3 minuti).

Unire la quinoa cotta agli spinaci, mescolare bene e aggiungere la feta, l'origano, sale e pepe.

Preparare il pesce: incidere lateralmente la fetta di spada per creare una tasca.

Farcire la tasca di spada con il composto di quinoa e spinaci.

Condire: spennellare la superficie del pesce con succo di limone e un pizzico di sale.

Cuocere: grigliare il pesce su una piastra calda per circa 5-7 minuti per lato, fino a quando è ben cotto e dorato.
