Taglia la spalla d'agnello in 3 porzioni da 100g, sciacqua patate novelle (60g) e pesa carote (50g) e cipolla (40g), quindi taglia a dadini.

Scalda un cucchiaio di olio EVO in una pentola antiaderente a fuoco vivace e rosola la carne su ambo i lati (3 min). Ritira l'agnello, aggiungi carote e cipolla, soffriglia 8 minuti mescolando.

Rimetti la carne, cospargila con un cucchiaio di semi di coriandolo schiacchiati, mezzo cucchiaio di cumino in polvere e 2 stelle di anice, sale e pepe.

Versa 150 ml di brodo vegetale, aggiungi le patate intere, copri e cuoci a fuoco basso per 90 minuti, bagnando la carne ogni 20 minuti.
