Iniziare scaldando l'olio extravergine d'oliva in una padella antiaderente a fuoco medio. Aggiungere la cipolla rossa tritata finemente e rosolare per circa 3 minuti, finché non diventa trasparente.

Unire il petto di pollo a cubetti e cuocere per circa 5 minuti, mescolando di tanto in tanto, fino a quando non è dorato.

Aggiungere l'aglio tritato e cuocere per un altro minuto prima di unire gli spinaci freschi. Mescolare e cuocere fino a quando gli spinaci si appassiscono, circa 2 minuti.

Versare i pomodorini ciliegini e il brodo vegetale, portare a ebollizione e aggiungere sale e pepe a piacere.

Nel frattempo, cuocere la quinoa seguendo le istruzioni sulla confezione. Una volta pronta, incorporarla nella padella con il resto degli ingredienti e mescolare bene.
