Inizia sciacquando il riso integrale sotto acqua corrente e poi mettilo in una pentola con 300 ml di acqua. Porta a ebollizione, quindi copri e cuoci a fuoco basso per circa 30 minuti, fino a quando l'acqua non è assorbita. Lascia riposare per 10 minuti.

Ammolla i funghi shiitake in acqua calda per 15 minuti, poi scolali e strizzali per eliminare l'acqua in eccesso. Tagliali a striscioline.

Preriscalda il forno a 180°C. Ungi leggermente una teglia da 23x33 cm con un po' d'olio.

Stendi uniformemente il riso cotto nella teglia e cospargi il furikake sulla superficie.

In una ciotola, mescola i funghi, il surimi, lo yogurt greco, la salsa di soia e l'olio di sesamo. Distribuisci il composto sopra il riso.

Cuoci in forno per circa 15 minuti, fino a doratura. Sforna e lascia raffreddare per qualche minuto prima di tagliare in 24 porzioni.

Servi ogni porzione avvolta in un'alga nori, conditela con semi di sesamo tostati.
