Method

Grattugiare finemente 80g di cavolfiore fresco e cuocerlo al vapore per circa 5 minuti, quindi lasciarlo raffreddare.

Tagliare 75g di tofu al naturale in piccoli cubetti e asciugarli delicatamente con carta assorbente.

In un pentolino, riscaldare a fuoco medio 20ml di aceto di riso, 5g di eritritolo, 10ml di olio di semi di girasole e 1g di sale, mescolando fino a sciogliere l'edulcorante (circa 2 minuti).

Togliere dal fuoco e lasciare raffreddare il condimento.

In una ciotola, unire il cavolfiore cotto e il tofu, quindi versare il condimento vinaigrette, mescolando delicatamente per 1 minuto.

Lasciare riposare per 5 minuti affinché il composto assorba i sapori e raggiunga una consistenza simile al riso sushi.
