Taglia il manzo in cubetti (120g) e rosola in padella antiaderente con 5ml d'olio EVO per 3 minuti. Aggiungi cipolla e aglio tritati, fai appassire 2 minuti.

Versa 150ml d'acqua, aggiungi zenzero, cannella in polvere, curry, zafferano e sale. Cuoci a fuoco medio-basso coperto per 45 minuti.

Nel frattempo cuoci le melanzane (180g, tagliate in cubetti) al vapore per 12 minuti.

In una padella antiaderente, versa 80ml del brodo di cottura, aggiungi le melanzane e 5g di miele. Fai caramellare a fuoco vivace per 5 minuti.

Unisci le melanzane al manzo, mescola delicatamente e cuoci altri 5 minuti. Servi caldo nel piatto di presentazione.
