Inizia preparando la salsa: cuoci il peperone rosso in 150ml d'acqua bollente per 5-7 minuti finché non si ammorbidisce. Frulla con lo spicchio d'aglio, cumino, sale, pepe e la passata di pomodoro fino a ottenere una crema liscia.

Per il ripieno, in una padella scalda un cucchiaino d'olio, aggiungi metà della salsa preparata e cuoci per 2 minuti. Unisci i fagioli neri e mescola bene, facendo evaporare i liquidi per 3 minuti. Aggiusta di sale e pepe.

Prepara l'impasto: in una ciotola mescola la farina d'avena, l'amido di mais e le proteine in polvere. Aggiungi 100ml d'acqua e la salsa di pomodoro rimanente, sbattendo fino a ottenere un composto omogeneo.

Prendi una foglia di mais ammollata e spalma 2 cucchiai d'impasto al centro. Aggiungi 2 cucchiai di ripieno di fagioli e piega i lati della foglia, chiudendo il fondo.

Cuoci a vapore i tamale in una vaporiera per 12-15 minuti finché l'impasto non si stacca facilmente dalla foglia.

Lascia riposare per 2 minuti prima di servire.
