Preriscaldare il forno a 175°C e foderare uno stampo rettangolare (10x30 cm) con carta forno.

In una ciotola, tritare finemente aglio, zenzero e prezzemolo con un coltello da chef.

Aggiungere il merluzzo tritato, 2 albumi d'uovo e metà dell'olio extravergine; mescolare delicatamente fino a ottenere un composto omogeneo; aggiustare di sale e pepe.

In un'altra ciotola, combinare il salmone tritato, scorza d'arancia grattugiata, 3 albumi rimanenti, succo d'arancia, succo di limone, olio residuo, sale e pepe; mescolare fino a omogeneità.

Versare il composto di merluzzo nello stampo, livellare bene e cospargere con i pistacchi tritati grossolanamente.

Coprire con il composto di salmone e livellare la superficie.

Cuocere in forno a 175°C per 42-45 minuti: la terrina deve essere soda al tatto e un termometro infilato al centro deve segnare 65°C.

Estrarre dal forno, lasciare intiepidire per 10 minuti nello stampo, poi sformare su un piatto di servizio.

Servire tiepida o a temperatura ambiente, affettando con un coltello leggermente bagnato e pulito tra un taglio e l'altro.
