Preparare due fogli di carta da forno di circa 30x30 cm ciascuno, posizionandoli su una superficie piana.

Tagliare il filetto di coniglio in pezzi uniformi di circa 3 cm; distribuire metà della quantità al centro di ciascun foglio.

Pulire la carota, il sedano e la cipolla; tagliarli a bastoncini sottili e distribuirli attorno al coniglio.

Aggiungere un rametto di rosmarino, un'alloro, una parte del prezzemolo, qualche bacca di ginepro e un pizzico di sale e pepe su ogni cartoccio.

Bagnare leggermente con metà del brodo e un filo di olio (4 ml per porzione).

Chiudere i cartocci ripiegando i bordi della carta, creando un involucro ermetico.

Posizionare i cartocci su una leccarda e cuocere in forno preriscaldato a 180°C per 40-45 minuti.

Estrarre dal forno, aprire con cautela il cartoccio (attenzione al vapore), trasferire il contenuto in un piatto e servire caldo.
