Ammollate la gelatina in acqua fredda per almeno 5 minuti, poi strizzatela bene e scioglietela a bagnomaria o in microonde a potenza media per 15 secondi.

Tritate finemente i biscotti integrali e mescolateli con l'olio di cocco sciolto e la granella di nocciole fino a ottenere un composto sabbioso.

Foderate uno stampo a cerniera da 20 cm con carta forno e distribuite il composto di biscotti sul fondo, compattandolo bene con il dorso di un cucchiaio. Lasciate riposare in frigorifero per 15 minuti.

In una ciotola, mescolate lo yogurt greco con il succo di limone, l'essenza di vaniglia e lo zucchero di canna integrale fino a ottenere una crema omogenea e dolce.

Incorporate delicatamente la gelatina sciolta nello yogurt, mescolando con movimenti dal basso verso l'alto per non smontare il composto.

Versate la crema di yogurt sulla base di biscotti e livellate bene la superficie.

Riporre lo stampo in frigorifero per almeno 6 ore, meglio se una notte intera.

Poco prima di servire, tagliate le fragole fresche a metà, condendole con un filo di miele se gradite, e sistematele sulla torta appena prima di portarla in tavola.
