Preriscalda il forno a 180°C e prepara una tortiera rotonda da 24 cm con carta forno.

Taglia la zucca a pezzi, cuocila al vapore per 12-15 minuti finché non è tenera, poi falla raffreddare leggermente e schiaccia con una forchetta.

Grattugia finemente la scorza dell'arancia e spremi il succo, setacciando per eliminare i semi.

In una ciotola, monta le uova intere con il miele fino a ottenere un composto pallido e gonfio (circa 3 minuti).

Aggiungi delicatamente la zucca cotta, il succo e la scorza di arancia, il cocco integrale e mescola con cura.

In una ciotola separata, setaccia insieme la farina integrale, le proteine in polvere, il lievito, la cannella, la noce moscata e il sale.

Unisci gli ingredienti secchi al composto umido, mescolando dal basso verso l'alto fino a incorporare tutto senza smontare.

Versa l'impasto nella tortiera e livella la superficie.

Cuoci a 180°C per 15 minuti, poi abbassa la temperatura a 160°C e prosegui per 20-25 minuti, finché uno stuzzicadenti inserito al centro esce pulito.

Lascia intiepidire nella tortiera per 10 minuti, poi sforma e raffredda completamente su una gratella.
