Method

Sciogliere il lievito secco in 150 ml di acqua tiepida e lasciare riposare 5 minuti.

In una ciotola grande, mescolare la farina integrale, la farina di proteine e il sale.

Versare l'acqua con il lievito nel mix di farine, aggiungere l'olio e impastare per 8-10 minuti fino a ottenere un impasto elastico e coeso.

Lasciar lievitare l'impasto coperto in un luogo tiepido (24°C) per 1 ora fino al raddoppio del volume.

Dividere l'impasto in 10 porzioni uguali (circa 60 g ciascuna) e arrotolarle in palline.

Stendere ciascuna pallina con il palmo e le dita fino a formare un cordoncino di 35-40 cm.

Creare un nodo all'estremità sinistra, far passare l'estremità destra attraverso il foro formando una treccia compatta.

Disporre le treccine su una placca rivestita di carta forno, spennellare leggermente con acqua e cospargere con i semi di papavero.

Coprire e lasciar lievitare ancora 45 minuti a temperatura ambiente.

Preriscaldare il forno a 220°C. Infornare le treccine e cuocere per 18-20 minuti fino a doratura.
