Preriscalda il forno a 180°C e prepara uno stampo quadrato di 10x10 cm.

In una ciotola, monta gli albumi con 15 g di eritritolo fino a formare picchi morbidi. Aggiungi il tuorlo e mescola delicatamente.

Incorpora la farina di cocco, il latte scremato e l'estratto di vaniglia, mescolando con una spatola.
