Lavare il cavolo viola, eliminare le foglie esterne danneggiate e tagliarlo in pezzi di medie dimensioni. Sbucciare la patata dolce e tagliare sia essa che la cipolla rossa in pezzi grossolani.

Mettere in una pentola i pezzi di cavolo, patata e cipolla, coprire con il brodo vegetale e portare a ebollizione.

Ridurre il fuoco e lasciare cuocere a fuoco lento per circa 25 minuti, finché gli ortaggi non siano completamente teneri e friabili.

Frullare il tutto con un frullatore a immersione fino a ottenere una consistenza vellutata e omogenea. Se necessario, aggiungere un poco di brodo per raggiungere la densità desiderata.
