Porta l'acqua a temperatura ambiente in una pentola grande e pulita.

In una ciotola capiente, combina alloro, timo, rosmarino, semi di coriandolo, sale marino e grani di pepe: mescola per distribuire uniformemente le spezie.

Versa l'acqua sulle erbe e lascia riposare coperto a temperatura ambiente per almeno 3-4 ore, finché il brodo non si è completamente raffreddato e infuso.

Sterilizza tre vasetti di vetro (circa 290 ml caduno) a 100°C per 10 minuti in acqua bollente, poi asciugali completamente.

Distribuisci equamente le cimette di cavolfiore, i bastoncini di carota e le cimette di broccolo nei tre vasetti.

Filtra il brodo aromatico e versa nei vasetti fino a coprire completamente le verdure (almeno 2 cm sopra).

Aggiungi il succo di limone fresco e opzionalmente l'aceto di mele: questi accelerano la fermentazione naturale e preservano la croccantezza.

Chiudi ermeticamente i vasetti e posizionali in uno spazio buio, fresco e ben aerato (15-18°C ideali) per 48-72 ore.

Durante la fermentazione vedrai piccole bollicine: segno che i batteri benefici stanno colonizzando le verdure.

Dopo 3 giorni, assaggia: se ami il sapore più acidulo, aspetta ancora 24 ore; altrimenti trasferisci in frigorifero dove si conserveranno per 2-3 settimane.

Consuma direttamente dal vasetto come snack disintossicante o aggiungi a insalate, piatti freddi e bowl.
