Pulisci accuratamente i porri tagliandoli a rondelle e sciacquandoli sotto acqua corrente. Pela e affetta la cipolla.

In una pentola riscalda il burro chiarificato a fuoco medio: aggiungi porri e cipolla, rosolando per 3-4 minuti fino a che non diventano traslucidi, mescolando occasionalmente.

Aggiungi le patate tagliate in dadini piccoli (1 cm), versa il brodo vegetale. Porta a ebollizione, abbassa il fuoco e cuoci coperto per 20 minuti fino a che le patate si sfaldano facilmente con una forchetta.

Trasferisci il tutto in un mixer a immersione (o in un frullatore standard): aggiungi latte scremato, yogurt greco, noce moscata, sale e pepe. Frulla fino a ottenere una crema liscia e omogenea.

Versa la vichyssoise in una ciotola, copri con pellicola trasparente e metti in frigorifero per almeno 4 ore (o overnight per maggiore freschezza).

Prima di servire, mescola delicatamente. Se troppo densa, dilui con 2-3 cucchiai di brodo o latte freddo. Versa nelle ciotole, condisci con un filo d'olio extravergine d'oliva e cipolline fresche tritate. Servi ghiacciata.
