Method

Preriscaldare il forno a 180°C e rivestire uno stampo a cerniera (Ø 24 cm) con carta forno.

In una ciotola, mescolare olio di cocco, 40 g di zucchero, farina di mandorle, cacao, lievito e sostituto uovo fino a ottenere un impasto compatto.

Distribuire i ¾ dell'impasto nello stampo, creando una base e un bordo di circa 3 cm di altezza. Riservare il resto.

In un mixer, frullare 30 g di zucchero e scorza di limone fino a polverizzarle.

Aggiungere tofu sericato, estratto di vaniglia, preparato per budino proteico e proteine in polvere; frullare fino a ottenere una crema liscia e omogenea.

Versare il composto di tofu sulla base di cioccolato.

Dalle dosi di impasto riservato, formare 20-24 palline e schiacciarle con i palmi delle mani; distribuirle sulla superficie della torta.

Tritare grossolanamente 40 g di nocciole e spargerle sulle sfoglie di impasto, irrorando con 10 g di olio di cocco.

Cuocere in forno a 180°C per 42-45 minuti: il bordo deve risultare dorato e il centro leggermente elastico al tocco.

Estrarre la torta dal forno e lasciarla raffreddare a temperatura ambiente per almeno 30 minuti.

Riporre in frigorifero per almeno 6 ore prima di sformare e servire (può essere conservata fino a 4 giorni in contenitore ermetico).
