Tagliare il tofu a dadini e marinarlo in una ciotola con 5g di salsa di soia e un pizzico di pepe per 10 minuti.

Tritare finemente l'aglio e lo zenzero.

In una pentola, scaldare 5g di olio extravergine di oliva a fuoco medio e aggiungere l'aglio e lo zenzero, soffriggendo per 1-2 minuti.

Aggiungere le carote e le zucchine tagliate a julienne, cuocere per altri 3 minuti.

Versare 400ml di acqua, aggiungere il cipollotto affettato e un pizzico di sale, quindi portare a ebollizione.
