Pulire i branzini: con forbici elimina le pinne, poi squama il pesce passando il coltello contropelo. Taglia lungo la pancia dalla cavità anale fino a 1 cm dalle branchie, estrai le viscere e sciacqua abbondantemente sotto acqua fredda.

Affetta il limone in rondelle sottili. Trincia finemente prezzemolo e aglio, mescola con sale e pepe in una ciotola.

Taglia zucchine e melanzane in bastoncini sottili, affetta i peperoni a striscioline.

Prepara due fogli di carta forno (35x45 cm). Posiziona un branzino al centro di ogni foglio.

Riempi la cavità interna di ogni pesce con metà del trito aromatico, 2-3 rondelle di limone e un filo d'olio. Distribuisci le verdure grigliate intorno al pesce, con le restanti rondelle di limone, l'olio rimasto e il restante trito.

Versa 75 ml di brodo vegetale su ogni cartoccio, quindi chiudi il foglio creando una busta sigillata ripiegando bene i bordi.

Adagia i cartocci su una teglia foderata di carta forno, cuoci in forno preriscaldato a 200°C per 25 minuti.

Estrai dal forno e servi subito, aprendo il cartoccio con cautela per non scottarsi con il vapore.
