Preriscalda il forno a 180°C e fodera una teglia rettangolare con carta forno.

Separa i tuorli dagli albumi e in una ciotola monta i tuorli con l'eritritolo fino a ottenere un composto chiaro e spumoso.

Aggiungi il cacao, l'estratto di vaniglia e il sale, mescolando bene.

In un'altra ciotola, monta gli albumi a neve ferma e incorporali delicatamente al composto di tuorli, facendo attenzione a non smontarli.

Versa l'impasto nella teglia e livellalo. Cuoci in forno per 10-12 minuti, finché non è elastico al tatto.

Una volta cotto, capovolgi il dolce su un canovaccio spolverato di cacao, rimuovi la carta forno e arrotola il dolce con il canovaccio. Lascia raffreddare.
