In una ciotola, mescola l'acqua tiepida con il lievito e l'eritritolo, lasciando riposare per 5 minuti.

Aggiungi la farina di avena, le proteine in polvere, la birra e l'olio; mescola fino a ottenere un impasto omogeneo.

Impasta a mano per 2-3 minuti fino a che non risulta liscio.

Metti l'impasto in una ciotola leggermente unta e copri; lascia lievitare per 30 minuti in un luogo caldo.

Forma una palla e lasciala riposare su carta forno coperta da un canovaccio per 15 minuti.

Porta a ebollizione 1 litro d'acqua con 20g di bicarbonato; immergi la palla per 20 secondi per lato, poi scolala.
