Method

Preriscaldare il forno a 175°C. Preparare uno stampo per colomba (500 g) rivestendolo con carta forno e ungendolo leggermente con burro.

In una ciotola, mescolare il Grana Padano grattugiato con la farina integrale, il sale e il pepe nero.

In un'altra ciotola, sbattere le uova con una frusta: aggiungere gradualmente il latte scremato e l'olio extravergine di oliva, mescolando fino a ottenere un composto omogeneo.

Versare il composto liquido negli ingredienti secchi e mescolare con una spatola fino a raggiungere un'impasto uniforme.

Aggiungere la mortadella tagliata in cubetti, 30 g di pistacchio tritato e il lievito: mescolare delicatamente per distribuire in modo uniforme.

Trasferire l'impasto nello stampo, livellare la superficie con una spatola bagnata e cospargere i restanti 5 g di pistacchio in superficie.

Cuocere in forno a 175°C per 38-40 minuti, fino a quando la colomba risulta dorata e uno stecchino inserito al centro esce pulito.

Estrarre dal forno e lasciar raffreddare completamente nello stampo per almeno 15 minuti prima di estrarre.
